Cookie project 01. Sablé Breton Cookies
We recently bought a recipe book called "京都菓道家の法式甜點筆記", written by a Japanese baker. The cookies, desserts and cakes are all very attractive. Not only the flavor but also the appearance of each product has their unique personality. I really admire the tidiness of Japanese culture, and this spirit is also apparent in their bakes.
We decided to take on a challenge to make our own versions of every product in this recipe book. I hope I could improve my baking skills throughout the adventure.
The first item is the Sablé Breton Cookies. It is a round shortbread cookie originated from Sablé-sur-Sarthe, in west France. I've wanted to try baking this cookie for a long time. Making this requires multiple round mousse molds in order to keep their round shape during the baking process under the heat. I enjoy the fairly taller height of this cookie compared to the usual thickness of cookies.
It is the kind of cookie that uses heavy portion of butter and eggs. A lot of them use almond flour, which I believe was the original taste of it. There are different patterns to draw on the surface of the cookie dough. It was more difficult than I expected due to the softness and vulnerable of the raw cookie dough.
The buttery and eggy flavor along with the crunch and the slightly crispy texture really make the afternoon tea more enjoyable! Cookie Project 01 ✅
