Cookie project 02. Sesame thin-sliced cookie

Sesame is one of the soul ingredients and components in Japanese cuisine. Personally, I like black sesame seeds more than white sesame seeds. However, each of them has the advantage over the other at difference occasions. 

I baked sesame cookies for the second cookie project. The challenge was slicing them into thin and consistent thickness and size, especially when the cookie dough got soft very quickly under room temperature. The charming part of this buttery cookie is that it consists a crisp when it breaks apart in your mouth, and then the little burnt and less sweetened flavor from the black sesame seeds would burst into your mouth.

I really enjoyed the flavor and texture of this sesame cookie, although it is probably a more adult-flavor snack. I wonder if there would be unexpectedly lovely taste and aroma if I use white sesame seeds?
